I never flip my eggs. Just add a little water and cover them with a lid. The water steams them perfectly.

Not with it. Batter is spotty and it should be more of a golden color as opposed to the pale white that it is.
If you sub regular flour for the rice flour it will be a bit darker but that’s not what we were going for. The rice and potato starch combo makes it stay crunchy for longer.

@@TwoChefsOneknifethe gills are safe, it really just comes down to preference. It’s no different than eating a liver or lungs if you’re worried about filtering bad stuff
